Tomato soup with spring onion

Recipe

spring onion 3.5 oz (100 g) • olive oil 2 tbsp • sugar granulated 1.75 oz (50 g)
Remove the roots, clean the young onion. Then wash, cut and fry in olive oil. Add sugar and let it melt.

tomato paste • water 2.1 cup (500 ml) • salt 1 tsp
Add tomato puree, water, salt to the onion and bring to a boil.

tomatoes 10.5 oz (300 g)
Meanwhile, pour hot water over the tomatoes. Let them rest in water for a while, then peel, cut..

...and add to the soup. Cook for 10 minutes.

water 1.1 cup (250 ml) • corn starch 0.75 oz (20 g)
Mix the cornstarch in the water and thicken the soup lightly.

parsley leaves 2 tbsp • salt • vinegar
Add chopped parsley to the mixture, add salt to taste and make sour with vinegar.
