Summer baked duck with vegetable salad

Wash the fresh duck, salt it inside and outside. Put in a deep baking dish, add water, cover and bake for an hour at 735°F (390°C) F (390°F (200°C) C). After an hour, turn, cover again and bake for another hour. While baking, prepare the salad.

ground red paprika 1 tsp
Take the duck with the baking dish out and uncover. Take a little juice from the meat and mix pepper in it. Spread the duck and put uncovered in the oven. Bake at 895°F (480°C) F (480°F (250°C) C) for 15 minutes.

Take baking dish out again, turn the duck over, spread it with pepper and bake on the other side. Put the baked duck on a plate, let cool and cut it into portions with poultry scissors. Instructions for slicing a duck can be found here .
