Stewed red cabbage with apples
Fine, sweet and sour stewed cabbage with apples, cranberries and cinnamon. Interesting side dish to roasted duck.

Recipe
1. Cutting of cabbage
red cabbage 3.3 lb (1500 g)
Remove damaged leaves from surface of head cabbage and rinse the whole head under the running water. Drain the cabbage and cut into the quarters. Chop into the thin slices, do not cut hard center - stump of cabbage. During chopping turn the cabbage the way that you cut it accross the whole head.

onion 7 oz (200 g) • sunflower oil 4 tbsp • sugar cane 3 tbsp
Clean the onion, cut it fine and fry in oil. Add sugar and let it caramelize.

salt 2.5 tsp • ground caraway 1 tsp • ground black pepper 0.5 tsp • water 10 tbsp (150 ml)
Add cabbage, salt, caraway and pepper. Add water, mix, cover and simmer for 10-15 minutes (till almost soft).

water 6.75 tbsp (100 ml) • ground cinnamon 0.5 tsp • dried cranberries 3.5 oz (100 g)
Add apples, water as needed, sprinkle with cinnamon and washed dried cranberries. Stir and simmer for about 10 minutes to soften the apples.
