Sour Cream Pagatsch

1. Preparation of dough
all-purpose flour / plain flour 10.5 oz (300 g) • unsalted butter 8.75 oz (250 g) • egg yolk 1 pc • sour cream (fat 14-18%) 5.25 oz (150 g) • vinegar 1 tsp • salt 2 tsp
Mix all ingredients and knead a smooth dough. Allow it to rest in the cold place for one hour.

Use a rolling pin to spread the cold dough on floured board until it is about 1 cm thin. Use a pagatsh cutter or small glass to cut out small pagatsch.

Place pagatsch on greased baking tin, sprinkle them with grated cheese and bake in preheated oven for about 10 minutes until golden.
