Peach sauce with cane sugar
Delicious sweet sauce made from fresh peaches. Suitable to drier cakes without filling (gingerbread, waffles...), or for some meat dishes.

Wash the peaches and pour boiling water. Let rest for 5 minutes. Then rinse with cold water...

Remove the stones and chop finelly. Put in a pot and add sugar. Let rest for a while (15 minutes). The sugar will dissolve and a sweet juice will be created.

ground ginger 0.25 tsp • ground cinnamon 0.25 tsp
Then add ginger, cinnamon and bring the peaches to a boil. Cook for 15 minutes from the boiling point, stirring frequently.

Finally, mash with a potato masher.

You can store for several days in the cold.
