Recipe
1. Preparation for the dough
all-purpose flour / plain flour 8.75 oz (250 g) • flour medium 8.75 oz (250 g) • chicken egg 1 pc • salt 1 tbsp • sour cream (fat 14-18%) 5.25 oz (150 g) • sunflower oil 3.25 tbsp (50 ml) • semi skimmed milk 1,5% ½ cup (120 ml) • fresh yeast 1 oz (25 g) • sugar granulated 1 tsp
Sourdough: We pour off a part of the milk, which we reheat to be warmish, we make leaven there and add sugar. We let the sourdough acidify until the swelling of leaven.
Dough: Flour and semi-wholemeal flour, egg, salt, sour cream, the rest of the milk, oil and fermented sourdough we knead together for the smooth unsticky dough.

We flour the dough, overlay by kitchen towel and let it in the warm about 30 minutes to acidify, meanwhile we prepare greaves stuffing.
3. Greaves stuffing
scratchings 1.1 lb (500 g) • sour cream (fat 14-18%) 1.75 oz (50 g) • ground black pepper 0.25 tsp • salt 0.5 tsp
We mill the greaves on the meat grinder (we can also use milled greaves like semifinished product), we add sour cream, spice and salt.

We divide the fermented dough on the two loaves.

On the floured plate we spread the dough, which we smear by greaves stuffing.

We roll the covered dough.
7.
We slice the swiss-roll on the triangles. We levy the triangles on the pan and we smear it with whipped egg. We bake it at the temperature about 15 minutes.
