Soak elderflowers picked up on a sunny day in cold water for a while. Take them out of the water with their flowers down and put on a strainer and let drain.

Put the flowers on a tray and let them dry.

semi skimmed milk 1,5% 1.3 cup (300 ml) • all-purpose flour / plain flour 8.75 oz (250 g) • chicken egg 2 pcs • vanilla sugar 0.75 oz (20 g)
Mix a liquid mixture from milk, flour, eggs and vanilla sugar.

Hold the flower by the stem and gently soak in the mixture.

Fry quickly in hot oil. When placing the flower in the oil, gently press so that it opens completely.

Put the fried flowers on a paper napkin to absorb excess oil. Eat the flowers only after cooling in an adequate amount, for some they may be harder digestible for the stomach.
