Fragile shortbread pastry

Recipe

all-purpose flour / plain flour 1.2 lb (560 g) • powdered sugar 7 oz (200 g) • unsalted butter 11.75 oz (330 g) • egg yolk 2 pcs • vanilla sugar 2 pk • lemon peel 1 tsp
Mix to combine all the ingredients, knead smooth dough and let it cool. Use rolling pin to spread the dough on floured board until it is about 3-4 mm thick.

Cut the dough with forms of different shapes, so that there is a small hole in the upper part of the cookie and full bottom part.

Bake at 355°F (180°C) for about 7 minutes, pastry should be pale.

Spread damson cheese over the bottom part and stick it with the upper part.

Coat such stuck together pastry with mixture of vanilla and powder sugar.
