all-purpose flour / plain flour 1.1 lb (500 g) • unsalted butter 10 oz (280 g) • powdered sugar 5.25 oz (150 g) • salt • ground walnuts 3.5 oz (100 g) • vanilla sugar 0.25 oz (8 g) • baking powder for gingerbread 1 tsp • egg yolk 2 pcs • chicken egg 1 pc
Cut the butter into smaller pieces and put in a bowl. When the butter softens, add flour, sugar, a pinch of salt, grounded nuts, vanilla sugar, baking powder, egg yolks and whole eggs. Knead the dough.

Let the dough rest in the cold for an hour. Preheat the oven to 670°F (355°C) F (355°F (180°C) C) C.

powdered sugar 7 oz (200 g) • lemon-juice
Add a few drops of lemon juice and sifted sugar to the whipped egg whites. Whip it until harden.

Roll the dough to a thickness of about 3 mm. Cut wheels out.

With a pastry bag spread the whipped egg whites on each wheel.

Bake for 20 minutes at 180 °C.
