Let the butter soften while the eggs are boiling and cooling down. Clean and chop the onion finely.

unsalted butter 1.5 oz (40 g) • whole Mustard 1.5 oz (40 g) • salt 0.5 tsp • onion 1.5 oz (40 g)
Separate the yolks from the egg whites. Mix the yolks with butter, mustard, salt and mix the onion.

Chop the egg whites with a knife finely.

Add them to the yolks.
