Dark elderberry syrup
Tasty elderberry syrup. Longer cooking gives it a darker, caramel colour.

Pick elderflowers during a sunny day. Don't pick the flowers from roadside. At home wash the flowers quickly in cold water to wash out as little pollen as possible.

Place the flowers in two larger bottles, 20 in each one.

water 1.1 gallon (4000 ml) • citric acid 3.25 oz (90 g)
Pour two litres of water into each bottle and add 45 g of citric acid. Stir and let rest for 24 hours.

After 24 hours pour the contents of the bottles through a sieve lined with gause into a pot. Wrap the flowers in gauze and squeeze well into the strained syrup.

Add sugar to the syrup and cook on a low heat for 2 hours. During this time, some of the water will evaporate, the syrup will thicken and darken.

Let the finished syrup to cool and pour into clean plastic bottles. Store in the refrigerator. The syrup can be poured hot into glass bottles. You get 3 litres of syrup from above mentioned amount. Consume the syrup in appropriate amount with water.
