Cream curd balls with apricot sauce
Recipe for preparing fine balls from cream curd, served with a sweet streusel of breadcrumbs. The balls are topped with a sweet and sour sauce of fresh apricots. For a larger family, we recommend to double the rations of the ingredients.

Recipe
1. Dough preparation
meal 3.25 oz (90 g) • semolina 1.5 oz (40 g) • chicken egg 1 pc • baking powder for gingerbread 1 tsp • vanilla sugar 0.5 oz (12 g) • salt 1 pinch • cream cheese 40% fat 8.75 oz (250 g)
Mix all the ingredients for the dough. Tear small pieces out of the dough and shape smaller balls.

Put the balls in lightly salted boiling water and cook for about 3 minutes after they appear on the surface. Drain the balls and rinse with cold water.
3. Preparation of streusel
breadcrumbs 8 tbsp • powdered sugar 3 tbsp • unsalted butter 0.75 oz (20 g)

... add breadcrumbs and fry on low heat, stirring constantly for about 3-4 minutes, until it starts to turn brown. Put aside, add powdered sugar and mix.
5. Preparation of apricot sauce
apricots 1.1 lb (500 g) • water 8 tbsp • sugar granulated 6 tbsp
Wash the apricots, peel and cut. Put in a pot, add water and sugar. Cook for about 20-25 minutes until cooked soft.

Strain the sauce through a sieve.

Serve the balls sprinkled with roasted breadcrumbs and topped with apricot sauce.
