Baked bobáľky
Bobáľky... a traditional Slovak Christmas dish. They are often served with poppy seeds, nuts, cream curd ... but they are delicous also wih bryndza cheese or cabbage. Their name and the way, how you serve them vary by region. From this amount you will get 250 g of bobáľky. Double the ingredients if needed.

Recipe

whole milk 3.5% 6.75 tbsp (100 ml) • flour medium 1 tsp • sugar granulated 2 tsp • fresh yeast 0.5 oz (15 g)
Mix flour and sugar with a little lukewarm milk. Add crumbled yeast and gently stir. Allow it to raise covered at warm place.

flour medium 7 oz (200 g) • unsalted butter 1.5 oz (40 g) • egg yolk 1 pc • salt 1 pinch
Put flour into a bowl, add a pinch of salt, melted butter and egg yolk. Add yeast and mix the dough.

Let it rise, covered, in a warm place.

Roll each part of the dough into a roller with a diameter of max. 2 cm. Cut each roller into 1.5-2 cm pieces.

You can bake the pieces directly as you cut them. But it is better to shape each piece into a ball, in lightly oiled palms.

Place the balls on a baking sheet lined with baking paper, at proportionate distance from each other.

Bake for 18 minutes at 180 °C.

Let cool. The bobáľky are soft, but may later harden. If you want to store them for a few days, put them in a plastic bag and wrap them in a dish towel.
